This recipe is adapted from the version handed down to me from my late mother-in-law, Lillian Carloni.
Preheat oven to 375 F.
Combine in large bowl and beat until creamy (hand mixer is good):
- ½ cup brown sugar
- ½ cup white sugar
- 3 eggs
Add to egg mixture and beat until well mixed:
- ½ cup vegetable oil
- ½ cup applesauce
- 1 cup white flour AND 1 cup fine whole wheat flour
(OR you can sub in 2 cups white whole wheat flour for the 1 cup of each) - 1 tsp baking soda
- 1 tsp salt
- At least 2 tsp cinnamon
- Optional nutmeg and cloves
Combine flour mixture into egg mixture. Stir until mixed well, but no more.
Fold in:
- 3 ½ cups thinly sliced apples
- 1 cup chopped walnuts (optional)
Pour into a flat 9’ by 13” pan. Bake 45 min to 1 hour at 375 degrees.
