What To Do With Green Tomatoes

by Margie Siegal

At the end of the summer, gardeners and farmers from many different cultures faced a similar problem: tomatoes that got started too late and never ripened. Gardeners and farmers around the world share two traits: first, they never throw anything away if they can help it and second, they are ingenious people. As a result, there are all sorts of delicious recipes for green tomatoes. Here is a selection:

FRIED GREEN TOMATOES

A Southern staple that uses typical Southern ingredients, like cornmeal and buttermilk. This is a highly rated recipe: https://www.simplyrecipes.com/recipes/fried_green_tomatoes/

GREEN TOMATO CHUTNEY

I have made this, using the recipe in Putting Food By (Plume Books, 2010) and it tasted great. If you don’t have this book (my canning Bible) here is an online recipe: https://lovelygreens.com/spicy-green-tomato-chutney/

ARMENIAN PICKLES (Tourshi)

I am now trying this recipe: https://www.seriouseats.com/tourshi-armenian-pickled-vegetables-recipe-7152277. It uses up other stuff in the garden that you haven’t gotten around to eating as well.

GREEN TOMATO MINCEMEAT

This is a very tasty vegetarian mincemeat and another offering from Putting Food By. Alternative if you don’t have the book: https://www.thespruceeats.com/green-tomato-mincemeat-3057088. Use the mincemeat to make pies, or spoon over ice cream.
